Hristo Mirchev


Hristo Mirchev is a chef and co-founder of the boutique chocolate brand HM Chocolates. He began his culinary career working in a Michelin-starred restaurant in Denmark, where he gained experience in fine gastronomy and professional kitchen standards. After returning to Bulgaria, he continued working in well-known restaurants in Sofia. His interest gradually shifted toward chocolate and confectionery, with a focus on flavor balance, quality ingredients, and craftsmanship. Together with Ivelina Markova, he founded HM Chocolates with the idea of turning chocolate tasting into a refined culinary and sensory experience.

Ivelina Markova


Ivelina Markova is a pastry chef and co-founder of HM Chocolates. She has experience working in restaurants in Sofia, where she specialized in desserts and sweet creations. Her work focuses on pastry, chocolate, and confectionery, with strong attention to visual presentation and detail. At HM Chocolates, she was responsible for developing chocolate and dessert concepts that combine taste, aesthetics, and creativity. Her role emphasized design, precision, and the artistic side of chocolate making.
